1 lb miniature carrots, peeled
2 Bay Leaves
1/2 c white vinegar
1/4 cup water
1/2 teaspoon salt
3 Tablespoons sugar
1/2 teaspoon mustard seed
1/2 teaspoon dill
1/4 teaspoon crushed red pepper
1 clove garlic, crushed
Steam carrots 10-12 minutes
Plunge carrots into cold water until cool
Drain carrots and pack in jar
Tuck in bay leaves
Mix remaining ingredients and stir until sugar is dissolved
Pour over carrots
Refrigerate for 5-7 days at least
For the 64oz plastic jars we're using use 2 1/2 lbs of carrots and make a triple recipe of the marinade.
