12 oz. extra-sharp cheddar cheese, grated
12 oz. Colby cheese, grated
1 lb elbow pasta, boiled, drained, and rinsed under cold water
2 Tbsp. butter
1/8 teaspoon cayenne
1/2 Tsp Salt
2/3 cup whole milk

Pre heat oven to 375 degrees
Grease a 9 x 13 casserole dish with about 1 Tbsp. butter
Combine both grated cheeses and set aside two heaping cups for topping
In a large bowl, toss the pasta, cheeses, cayenne and salt. Pour into casserole dish and add milk evenly
Evenly spread reserved cheese over the top.
Place butter dots evenly using 1 Tbsp of butter.
Bake uncovered for 45 minutes.
Increase heat to 400 degrees and bake an additional 15 minutes until top is crispy.
You can cut the ingredients in half and use an 11x7 pan and reduce the cooking time about 5-10 minute for half a recipe.
